Ingredients for Budae Jjigae (Serves 8)

Main

  • 8 cups (1 litre) Beef bone broth

  • 400g (14 ounces) SPAM, thinly sliced

  • 8 cocktail Frankfurt sausage, thinly & diagonally sliced

  • 500g (18 ounces) tofu, sliced (about 1.5cm, 1/2 inch thickness)

  • 400g (14 ounces) enoki mushrooms, base stem removed & stems separated

  • 400g (14 ounces) king oyster mushrooms, thinly sliced length ways

  • 200g (7 ounces) shiitake mushroom caps, thinly sliced

  • 1 cup aged kimchi, cut into bite sized pieces

  • 2 packages of instant ramen noodles

  • 100g (4 ounces) Korean rice cakes for soup, soaked in cold water for 15 mins if it was frozen

  • 60g (2 ounces) green onion, thinly & diagonally sliced

  • 2 slices of cheese (Optional)
